Moist Apple Cake

2 eggs
1 c. vegetable oil
1/2 c. applesauce (no sugar added)
2 c. sugar
1 tsp vanilla
2 c. flour
1/2 tsp salt
2 tsp ground cinnamon
1 tsp baking soda
4 med - large apples (grated)


Topping
1/3 c. packed br. sugar
1/8 c. flour
1 Tbsp butter (softened)

Preheat oven to 350 degrees F. Grease and flour one 9X13 inch cake pan.

In a mixing bowl; beat oil, apple sauce and eggs with an electric mixer until creamy. Add sugar and vanilla and beat well.

In a separate bowl combine the flour, salt, baking soda and ground cinnamon together. Slowly add this mixture to the egg mixture and mix until combined. The batter will be thick. Fold in the apples. Spread batter into the prepared pan.

Bake for 45 minutes or until cake test done. Let cool on a wire rack. Serve with sweetened whip cream or a dusting of confectioners' sugar.
