Crock Pot Chicken Tacos



1 lb boneless skinless chicken breasts
1 can Chicken broth
1/2c. onions
1 tsp. garlic
2 tsp. Mexican spice mix
1 Tbsp. tomato paste

Mexican spice mix:
(mix all ingredients together in a small Tupperware bowl)
1/4c. paprika
2 tsp. cayenne pepper
2 Tbsp. salt
2 tsp. white pepper
2 Tbsp. black pepper
2 Tbsp. granulated garlic
2 Tbsp. chili powder
2 Tbsp. oregano

In a Crock Pot add the chicken and chicken broth. In a small pan saute the onions and garlic until transparent. Add onions and garlic to the chicken. Add the spice mix and tomato paste and mix in. Cook on low for 3hrs or until chicken is tender. Remove chicken from crock pot and shred. Place shredded chicken back into the crock pot and cook for 45minutes more.
